Gluten Free Banana Bread

Ingredients:

1/3 cup Canola Oil
2/3 cup Brown sugar, packed
2 large eggs
1 tsp. Vanilla extract
1-3/4 cups Bob's Red Mill all purpose flour
2 tsp. Baking powder
1-1/4 tsp. Cinnamon
1 tsp. Xanthan Gum
1/2 tsp. Salt
1-1/2 cups Bananas mashed
1/2 cup finely chopped pecans or walnuts
1/2 cup raisins

Preheat oven to 350 degrees F. Grease 9x5 inch non-stick loaf pan.

Cream together oil, sugar, eggs, and vanilla in large bowl with electric mixer. Add flour, xanthan gum, salt, baking powder and cinnamon to egg mixture, alternating with bananas. Beat until smooth. Stir in nuts and raisins. Batter will be somewhat soft. Transfer to pan. Bake for 1 hour.

This Banana Bread is moist, not gritty.

Butternut Squash Casserole

Instead of mashed potato, I make this delicious Butternut Squash Casserole recipe.

Found this recipe in the Taste of Home Magazine.

Ingredients:

2 medium butternut squash, peeled and cut into chunks
1/2 cup sugar
2 eggs
1/4 cup milk
2 tablespoon butter
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg

Directions:

Place squash in a large saucepan and cover with water; bring to boil. Reduce heat; cover and simmer for 12-16 minutes or until tender. Drain

In a small mixing bowl, beat squash until smooth. Add the remaining ingredients; beat well. Spoon into a 1-1/2 qt baking dish coated with cooking spray. Cover and bake at 350 degrees for 30-35 minutes.

Serves 6

Fudgy Chocolate Chip Brownies

1/2 cup butter or margarine
1 square (1oz) semi-sweet baking chocolate
1 cup sugar
1/2 cup all-purpose flour
1/2 cup Chocolate flavored Malt-O-Meal hot wheat cereal dry
2 eggs
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt
1/2 cup semi-sweet chocolate baking chips

Preheat oven to 350 degrees F. In a 2-quart saucepan, melt butter and chocolate over medium heat, stirring occasionally (3 to 4 minutes). Add remaining ingredients; stir to blend. Pour into 9 inch square baking pan. Bake for 25 to 30 minutes or until toothpick inserted into center comes out clean. Cool completely; cut into bars. Brownies can be frozen and eaten directly from the freezer.

Makes 18 brownies

Gluten Free Country White Bread - for the bread machine

This recipe was included with my new Breadman bread machine. It turned out moist and tasty. Thought I share it with you.

Cycle: Gluten Free

Ingredients:

1-1/3cups Water. 110 degrees - 115 degrees
3 Eggs
3 Tablespoons Oil
1 tsp Cider vinegar
3 Tablespoons Sugar
1-1/2 tsp Salt
1/2 cup Dry Milk
2 cups White Rice Flour
1-1/4 cup Potato Starch Flour
1/3 cup Soy Flour
1/2 cup Tapioca Flour
1 Tablespoon Xanthan Gum
4-1/2 tsp Quick Rise Yeast

Add ingredients to bread pan, just like your instruction manual states. Bake bread on Gluten Free cycle
